  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground turkey
  • 1 large red bell pepper, chopped
  • 1 large green bell pepper, chopped
  • 1 can diced tomatoes (14.5 oz)
  • 1 can black beans, drained and rinsed (15 oz)
  • 1 can kidney beans, drained and rinsed (15 oz)
  • 2 tablespoons tomato paste
  • 1 cup chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon chipotle powder
  • 1/2 cup corn kernels (fresh or frozen)
  • 1/4 cup fresh cilantro, chopped (optional)

Instructions
 

  • In a large pot, heat olive oil over medium heat.
  • Add the onion and garlic, sauté until fragrant and softened, about 3-4 minutes.
  • Add the ground turkey, breaking it apart with a wooden spoon, and cook until browned.
  • Stir in red and green bell peppers, cook for another 5 minutes until softened.
  • Add diced tomatoes, black beans, kidney beans, tomato paste, and chicken broth. Stir to combine.
  • Mix in chili powder, cumin, smoked paprika, oregano, salt, black pepper, and chipotle powder.
  • Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
  • Add the corn kernels and cook for another 5 minutes.
  • Remove from heat and stir in fresh cilantro, if using.
  • Serve hot, garnished with additional cilantro if desired.
