- 1 tablespoon olive oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 2 medium carrots, sliced
- 1 medium zucchini, chopped
- 1 red red bell pepper, chopped
- 1 cup butternut squash, cubed
- 1 can chickpeas, drained and rinsed
- 1/2 cup dried apricots, chopped
- 1 can diced tomatoes
- 2 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- Salt and and black pepper to taste
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh parsley, chopped
- 1/2 lemon, lemon, juiced
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic, and sauté until softened, about 5 minutes.
- Stir in the carrots, zucchini, red bell pepper, and butternut squash, cooking for an additional 5 minutes.
- Add the chickpeas, dried apricots, diced tomatoes, and vegetable broth.
- Stir in the cumin, coriander, cinnamon, ginger, turmeric, cayenne pepper, salt, and black pepper.
- Bring to a boil, then reduce heat to low and simmer for 25-30 minutes, until vegetables are tender and flavors are well combined.
