- 1 cup quinoa
- 2 cups water
- 1 cup shelled edamame
- 1/2 cup red bell pepper, diced
- 1/4 cup carrot, julienned
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 3 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon honey
- 1 clove garlic, minced
- 1/2 teaspoon grated fresh ginger
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon sesame seeds
Instructions
- Rinse quinoa under cold water. Combine quinoa and water in a medium saucepan and bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes or until all water is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.
- While quinoa is cooking, steam edamame until tender, about 5 minutes.
- In a large bowl, combine cooked quinoa, edamame, red bell pepper, carrot, red onion, and cilantro.
- In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, garlic, ginger, salt, and black pepper.
- Pour dressing over the quinoa mixture and toss well to combine.
- Sprinkle sesame seeds on top before serving.
