Ingrédients
  

  • 1 cup quinoa
  • 2 cups water
  • 1 cup shelled edamame
  • 1/2 cup red bell pepper, diced
  • 1/4 cup carrot, julienned
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 3 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon honey
  • 1 clove garlic, minced
  • 1/2 teaspoon grated fresh ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon sesame seeds

Instructions
 

  • Rinse quinoa under cold water. Combine quinoa and water in a medium saucepan and bring to a boil.
  • Reduce heat to low, cover, and simmer for 15 minutes or until all water is absorbed.
  • Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.
  • While quinoa is cooking, steam edamame until tender, about 5 minutes.
  • In a large bowl, combine cooked quinoa, edamame, red bell pepper, carrot, red onion, and cilantro.
  • In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, garlic, ginger, salt, and black pepper.
  • Pour dressing over the quinoa mixture and toss well to combine.
  • Sprinkle sesame seeds on top before serving.
