- 1/2 cup red bell pepper, diced
- 1/4 cup carrot, julienned
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 3 tablespoons rice vinegar
- 1/2 teaspoon grated fresh ginger
- 1/4 teaspoon black pepper
- 1 tablespoon sesame seeds
Rinse quinoa under cold water. Combine quinoa and water in a medium saucepan and bring to a boil.
Reduce heat to low, cover, and simmer for 15 minutes or until all water is absorbed.
Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.
While quinoa is cooking, steam edamame until tender, about 5 minutes.
In a large bowl, combine cooked quinoa, edamame, red bell pepper, carrot, red onion, and cilantro.
In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, garlic, ginger, salt, and black pepper.
Pour dressing over the quinoa mixture and toss well to combine.
Sprinkle sesame seeds on top before serving.
