- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can cannellini beans (15 oz), drained and rinsed
- 4 cups vegetable broth
- 4 cups fresh spinach, chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes
- Salt and and pepper to taste
- Juice of of 1/2 lemon
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and cook until softened, about 5 minutes.
- Stir in minced garlic and cook for another minute until fragrant.
- Add cannellini beans and vegetable broth to the pot.
- Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
- Stir in chopped spinach, dried thyme, dried oregano, red pepper flakes, salt, and pepper.
- Cook for another 5 minutes, until spinach is wilted.
