Ingrédients
  

  • 2 large ripe avocados
  • 1 pound cooked shrimp, peeled and deveined
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon olive oil

Instructions
 

  • In a large bowl, combine cooked shrimp, cherry tomatoes, red onion, and cilantro.
  • In a small bowl, whisk together lime juice, salt, black pepper, smoked paprika, and olive oil.
  • Drizzle the lime dressing over the shrimp mixture and toss to combine.
  • Halve the avocados and remove the pits. Scoop out the flesh carefully to keep the avocado halves intact.
  • Dice the avocado flesh and gently fold into the shrimp mixture.
  • Spoon the shrimp and avocado mixture back into the avocado halves.
  • Serve immediately, garnished with extra cilantro if desired.
