  • 4 large eggs
  • 1/2 lb chorizo sausage, casings removed
  • 1 tablespoon olive oil
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 small small corn tortillas
  • 1/4 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup salsa
  • 1 avocado, avocado, diced

Instructions
 

  • Cook the chorizo in a skillet over medium heat until fully cooked, about 5-7 minutes. Remove from skillet and set aside.
  • In the same skillet, heat olive oil over medium heat.
  • In a bowl, whisk together eggs, milk, salt, and pepper.
  • Pour egg mixture into the skillet and scramble until fully cooked, about 3-4 minutes.
  • Warm the corn tortillas in another skillet for about 1 minute on each side.
  • To assemble the tacos, divide scrambled eggs and chorizo evenly among the tortillas.
  • Top with diced red onion, cilantro, cheddar cheese, salsa, and avocado.
  • Serve immediately and enjoy!
