  • 2 cups cooked brown rice
  • 1 cup shelled edamame
  • 1/2 cup grated carrot
  • 1/4 cup finely chopped red onion
  • 2 tablespoons grated fresh ginger
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon lime juice
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon sesame seeds
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • In a large bowl, combine the cooked brown rice and shelled edamame.
  • Add the grated carrot and chopped red onion to the bowl and mix well.
