  • 2 cups sweetened shredded coconut
  • 1/2 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 2 large egg whites
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips (optional)

Instructions
 

  • Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Mix until well combined.
  • In a separate bowl, beat the egg whites with the salt until stiff peaks form.
  • Gently fold the beaten egg whites into the coconut mixture until fully incorporated.
  • Using a small cookie scoop or spoon, drop rounded tablespoons of the dough onto the prepared baking sheet, about 1 inch apart.
  • Bake for 18-20 minutes, or until the edges are lightly golden brown.
  • Cool the macaroons on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  • If desired, melt the chocolate chips in a microwave-safe bowl in 30-second intervals until smooth, and then dip the bottoms of the cooled macaroons in the melted chocolate. Place them on parchment paper to set.
