  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 12 ounces ounces fettuccine pasta
  • 2 tablespoons chopped fresh parsley

Instructions
 

  • Cook fettuccine pasta according to package instructions. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat.
  • Season the chicken pieces with salt and black pepper.
  • Add the chicken to the skillet and cook until golden and cooked through, about 6-8 minutes.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, add the minced garlic and cook until fragrant, about 1 minute.
  • Pour in the heavy cream and chicken broth, then bring to a simmer.
  • Stir in the grated Parmesan cheese and cooked chicken, then continue to simmer until the sauce thickens, about 4-5 minutes.
  • Toss the cooked fettuccine pasta with the Alfredo sauce until well coated.
  • Garnish with chopped fresh parsley and serve immediately.
