  • 200 grams grams penne pasta
  • 1/2 cup basil pesto
  • 1/2 cup heavy cream
  • 1 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons pine nuts (optional)
  • Fresh basil basil leaves for garnishing

Instructions
 

  • Cook the penne pasta according to the package instructions until al dente. Drain and set aside.
  • In a large pan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant.
  • Add the cherry tomatoes to the pan and cook for another 3-4 minutes until they start to soften.
  • Lower the heat and stir in the basil pesto and heavy cream, mixing until well combined.
  • Season with salt and black pepper, then add the cooked pasta to the pan. Toss to coat the pasta evenly with the creamy pesto sauce.
  • Sprinkle the grated Parmesan cheese over the top and mix well. If using, add the pine nuts and toss.
  • Remove from heat and garnish with fresh basil leaves before serving.
