Ingrédients
  

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh spinach
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 1/2 cup feta cheese, crumbled
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and sauté until translucent, about 5 minutes.
  • Stir in the garlic and cook for another minute.
  • Add the fresh spinach and cook until wilted, about 3 minutes.
  • Pour in the vegetable broth and bring to a boil, then reduce the heat and simmer for 10 minutes.
  • Carefully blend the soup until smooth using an immersion blender or in batches in a regular blender.
  • Return the soup to the pot and stir in the heavy cream.
  • Add the crumbled feta cheese, salt, pepper, and nutmeg, stirring until the cheese is melted and the soup is creamy.
  • Serve hot, garnished with additional feta if desired.
