Ingrédients
  

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and diced
  • 4 cups vegetable broth
  • 2 cups fresh spinach, chopped
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/4 cup heavy cream

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until translucent, about 5 minutes.
  • Add the minced garlic and sauté for another minute.
  • Stir in the diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the potatoes are tender.
  • Using an immersion blender, puree the soup until smooth.
  • Add the chopped spinach, milk, salt, pepper, and nutmeg. Stir well and cook for an additional 5 minutes until the spinach is wilted.
  • Stir in the heavy cream and heat through, without boiling.
  • Serve hot, garnished with extra spinach or a dollop of cream if desired.
