  • 2 large zucchinis
  • 1 cup finely grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 tablespoon olive oil

Instructions
 

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Cut the zucchinis into thin sticks, resembling fries.
  • In a shallow bowl, mix Parmesan cheese, panko breadcrumbs, salt, pepper, garlic powder, and paprika.
  • Beat the eggs in a second shallow bowl.
  • Place the flour in a third shallow bowl.
  • Dredge each zucchini stick in flour, dip in beaten eggs, and coat with the Parmesan mixture.
  • Place the coated zucchini fries on the prepared baking sheet.
  • Drizzle the olive oil over the zucchini fries to help them crisp up in the oven.
  • Bake for 20-25 minutes, turning once halfway through, until golden and crispy.
