Ingrédients
  

  • 2 cups cooked and shelled edamame
  • 1/2 cup chickpea flour
  • 1/2 cup fresh mint leaves
  • 1/4 cup fresh parsley
  • 2 cloves garlic
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/4 cup tahini
  • 1/4 cup water
  • 1/2 teaspoon paprika

Instructions
 

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a food processor, combine edamame, mint, parsley, garlic, lemon juice, cumin, coriander, salt, and pepper. Process until smooth.
  • Add chickpea flour to the mixture and pulse until well combined.
  • Using your hands, form the mixture into small balls and place them on the prepared baking sheet.
  • Brush the falafel balls with olive oil.
  • Bake in the preheated oven for 20-25 minutes, or until golden and firm.
  • While falafels are baking, prepare the tahini sauce by whisking together tahini, water, paprika, and a pinch of salt.
  • Serve the falafel bites warm, drizzled with tahini sauce.
