  • 2 nectarines, nectarines, sliced
  • 1/2 cup ricotta cheese
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar

  • 1/4 teaspoon black pepper
  • 1/4 cup slivered almonds, toasted

Instructions
 

  • Blanch the green beans in boiling water for 2-3 minutes until crisp-tender. Drain and rinse under cold water to stop the cooking process.
  • In a large salad bowl, combine the green beans and nectarine slices.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and black pepper.
  • Pour the dressing over the salad and toss to coat.
  • Dollop the ricotta cheese over the top of the salad.
