  • 1 cup sweet rice flour
  • 1/2 cup coconut milk
  • 2/3 cup sugar
  • 1 tablespoon matcha powder
  • 1/2 cup shredded coconut
  • 2/3 cup water
  • 1/4 teaspoon vanilla extract
  • Cornstarch for for dusting

Instructions
 

  • In a microwave-safe bowl, combine sweet rice flour, sugar, matcha powder, and water. Mix until smooth.
  • Cover the bowl with plastic wrap, leaving a small part uncovered to vent.
  • Microwave for 1 minute. Stir the mixture, re-cover, and microwave for an additional 1 minute. Stir again once done.
  • Add the coconut milk and vanilla extract to the mixture. Stir until smooth.
  • Microwave for another 1 minute, then let it cool slightly.
  • Dust a clean surface with cornstarch and turn the dough out. Sprinkle with more cornstarch and knead slightly until it's pliable.
  • Flatten the dough and sprinkle with shredded coconut on both sides.
  • Cut the dough into bite-sized pieces using a knife or pizza cutter.
  • Let cool completely before serving.
