  • 1 cup all-purpose flour
  • 1 tablespoon matcha green tea powder
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh strawberries, sliced (for serving)
  • 1/4 cup maple syrup (for serving)

Instructions
 

  • In a large bowl, sift together the flour, matcha powder, sugar, baking powder, baking soda, and salt.
  • In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  • Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
  • Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, then flip and cook until the other side is golden brown, about 1-2 minutes per side.
  • Serve the pancakes stacked, topped with fresh strawberry slices and drizzled with maple syrup.
