Ingrédients
  

  • 1 cup orzo pasta
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Cook the orzo pasta according to package instructions. Drain and let it cool.
  • In a large bowl, combine the cooked orzo, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, parsley, and basil.
  • In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper.
  • Pour the dressing over the orzo mixture and toss to combine.
  • Chill in the refrigerator for at least 30 minutes before serving.
