Ingrédients
  

  • 8 small small flour tortillas
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup diced green bell pepper
  • 1/4 cup diced red onion
  • 1/4 cup canned black beans, rinsed and drained
  • 1 tablespoon olive oil
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt

Instructions
 

  • Preheat a large skillet over medium heat and add olive oil.
  • In a small bowl, mix the shredded cheddar and Monterey Jack cheeses together.
  • Place one tortilla in the skillet and evenly sprinkle a small amount of the cheese mixture on top.
  • Add a spoonful of diced green bell pepper, red onion, and black beans over the cheese.
  • Sprinkle a pinch of chili powder, cumin, and salt over the vegetables.
  • Top with another small amount of cheese and place a second tortilla on top.
  • Cook for 2-3 minutes on each side, or until the tortillas are golden brown and the cheese is melted.
  • Remove from skillet and repeat with remaining tortillas and filling.
  • Slice each quesadilla into quarters and serve warm.
