- 1 cup sweetened condensed milk
- 1/2 cup passion fruit juice
- 1 teaspoon vanilla extract
Preheat your oven to 350°F (175°C).
In a saucepan, combine 1 cup of sugar and 1/2 cup of water. Cook over medium heat until the sugar dissolves and turns into a golden caramel. Pour caramel into a flan mold and swirl to coat the bottom.
In a blender, combine sweetened condensed milk, coconut milk, eggs, passion fruit juice, and vanilla extract. Blend until smooth.
Pour the mixture into the caramel-coated mold and sprinkle shredded coconut on top.
Place the mold in a larger baking pan. Fill the pan with boiling water until it reaches halfway up the sides of the mold.
