Ingrédients
  

  • 200 g pearl couscous
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 medium cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons lemon juice
  • 1 tablespoon red wine vinegar
  • 1 tablespoon honey
  • 1/4 teaspoon black pepper

Instructions
 

  • Cook the pearl couscous according to the package instructions, then drain and rinse under cold water.
  • In a large bowl, combine the cooked couscous, olive oil, and salt. Mix well.
  • Add the cucumber, cherry tomatoes, red onion, parsley, mint, dill, and feta cheese to the bowl.
  • In a small bowl, whisk together the lemon juice, red wine vinegar, honey, and black pepper.
  • Pour the dressing over the salad and toss to combine.
  • Serve immediately or refrigerate for up to 2 hours to allow the flavors to meld.
