  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, room temperature
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 cup whole almonds, toasted and coarsely chopped

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  • In a large bowl, beat sugar and butter until light and fluffy, about 2 minutes.
  • Add eggs, one at a time, beating well after each addition. Mix in vanilla and almond extracts.
  • Gradually add flour mixture to wet ingredients, mixing until just combined. Fold in chopped almonds.
  • Divide dough in half. Shape each half into a log about 12 inches long and 2 inches wide. Place logs on the lined baking sheet, spacing them about 3 inches apart.
  • Bake for 25-30 minutes, or until golden brown and firm to the touch. Remove from oven and let cool for 10 minutes.
  • Using a serrated knife, cut logs diagonally into 1/2-inch thick slices. Arrange slices, cut side down, on baking sheet.
  • Bake for an additional 10-12 minutes, or until biscotti are crisp and golden. Transfer to a wire rack to cool completely.
