Ingrédients
  

  • 4 medium potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk or cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh chives, chopped
  • 1/2 cup shredded cheddar cheese (optional)

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the onion and garlic, sautéing until softened and fragrant, about 5 minutes.
  • Add the diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  • Using an immersion blender, puree the soup until smooth. Alternatively, transfer the soup in batches to a blender.
  • Return the soup to the pot and stir in the milk or cream. Season with salt and black pepper.
  • Heat through without boiling and serve hot, garnished with fresh chives and shredded cheddar cheese if desired.
