  • 2 large eggs
  • 1/2 avocado, avocado, sliced
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup black beans, rinsed and drained
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh cilantro

Instructions
 

  • Cook the quinoa according to package instructions and let it cool.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  • In a skillet over medium heat, cook the eggs sunny-side up or to your liking.
  • In a serving bowl, place the cooled quinoa as the base.
  • Arrange the avocado slices, cherry tomatoes, black beans, and cooked eggs on top of the quinoa.
  • Drizzle the olive oil and lemon juice mixture over the bowl.
  • Sprinkle with chopped fresh cilantro and serve immediately.
