- 1 can white beans, drained and rinsed
- 1/4 teaspoon black pepper
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 1/4 cup grated Parmesan cheese (optional)
- 1 tablespoon balsamic glaze
- 8 slices of sourdough bread
Preheat oven to 400°F (200°C). Slice off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for 30 minutes until soft.
In a bowl, mash the roasted garlic with white beans, lemon juice, salt, and black pepper until smooth.
Toast the sourdough slices until golden and crisp.
Spread the garlic-bean mixture over each slice of toast.
