  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon dried thyme
  • 1/2 cup dry white wine
  • 4 cups vegetable broth
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream (optional)
  • 2 tablespoons freshly grated Parmesan cheese (optional)
  • Fresh thyme thyme sprigs for garnish

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Toss the sliced onions with olive oil, garlic, fresh thyme, dried thyme, salt, and pepper.
  • Spread the onion mixture evenly on a baking sheet and roast in the oven for 25-30 minutes, stirring occasionally, until the onions are caramelized and golden brown.
  • Transfer the roasted onions to a large pot and add the white wine. Cook over medium heat, stirring frequently until the wine has reduced by half.
  • Pour in the vegetable broth and bring the soup to a simmer. Let it cook for 15 minutes to allow the flavors to meld.
  • If using, stir in the heavy cream and simmer for an additional 5 minutes.
  • Serve the soup hot, garnished with freshly grated Parmesan cheese and fresh thyme sprigs.
