- 1 1/2 1/2 cups chicken broth
- 1 pound shrimp, peeled and deveined
- 1/2 pound mussels, scrubbed and debearded
- 1 medium red bell pepper, thinly sliced
- 1 lemon, lemon, cut into wedges

Heat olive oil in a large paella pan or a wide, shallow skillet over medium heat.
Add the onion and garlic, sauté until soft and translucent, about 3-4 minutes.
Stir in the saffron threads and smoked paprika, cook for another minute.
Add the Arborio rice to the pan, stirring to coat the grains with the oil and spices.
Pour in the chicken broth and white wine, bring to a gentle simmer.
Cook the rice, stirring occasionally, until it absorbs most of the liquid, about 15 minutes.
Add the shrimp, mussels, and squid rings to the pan, nestling them into the rice.
Scatter the peas and red bell pepper slices over the top.
Cover the pan with a lid or foil, and cook until the seafood is cooked through and the mussels have opened, about 5-7 minutes.
Remove from heat, sprinkle with chopped parsley, and season with salt and black pepper to taste.
Serve the paella with lemon wedges on the side.
