  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon saffron threads
  • 1/2 teaspoon smoked paprika
  • 1 cup Arborio rice
  • 1 1/2 1/2 cups chicken broth
  • 1/2 cup dry white wine
  • 1 pound shrimp, peeled and deveined
  • 1/2 pound mussels, scrubbed and debearded
  • 1/2 pound squid rings
  • 1/2 cup frozen peas
  • 1 medium red bell pepper, thinly sliced
  • 1/4 cup chopped parsley
  • 1 lemon, lemon, cut into wedges
  • Salt to to taste
  • Black pepper pepper to taste

Instructions
 

  • Heat olive oil in a large paella pan or a wide, shallow skillet over medium heat.
  • Add the onion and garlic, sauté until soft and translucent, about 3-4 minutes.
  • Stir in the saffron threads and smoked paprika, cook for another minute.
  • Add the Arborio rice to the pan, stirring to coat the grains with the oil and spices.
  • Pour in the chicken broth and white wine, bring to a gentle simmer.
  • Cook the rice, stirring occasionally, until it absorbs most of the liquid, about 15 minutes.
  • Add the shrimp, mussels, and squid rings to the pan, nestling them into the rice.
  • Scatter the peas and red bell pepper slices over the top.
  • Cover the pan with a lid or foil, and cook until the seafood is cooked through and the mussels have opened, about 5-7 minutes.
  • Remove from heat, sprinkle with chopped parsley, and season with salt and black pepper to taste.
  • Serve the paella with lemon wedges on the side.
