  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 large lime, juiced
  • 8 small small corn tortillas
  • 1 large mango, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 medium jalapeño, seeded and finely chopped
  • 1/2 medium red bell pepper, diced
  • 1 large lime, juiced
  • 1/4 teaspoon salt

Instructions
 

  • In a large bowl, combine shrimp, olive oil, chili powder, cumin, garlic powder, salt, and lime juice. Toss to coat.
  • Heat a large skillet over medium-high heat. Add the seasoned shrimp and cook for about 2-3 minutes per side, or until pink and cooked through. Remove from heat and set aside.
  • In a separate bowl, combine mango, red onion, cilantro, jalapeño, red bell pepper, lime juice, and salt to make the mango salsa.
  • Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until pliable.
  • Assemble the tacos by placing a few shrimp on each tortilla, and top with mango salsa.
  • Serve immediately and enjoy!
