- 1 pound spicy sausage, sliced
- 1 medium yellow onion, diced
- 1 can diced tomatoes, 14.5 oz
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon black pepper
Heat olive oil in a large pot over medium heat. Add sausage and cook until browned.
Remove sausage and set aside. In the same pot, add onion and garlic, sauté until soft, about 5 minutes.
Stir in carrots and potatoes, cook for another 5 minutes.
Add kale and cook until wilted, about 2 minutes.
Pour in chicken broth and diced tomatoes. Return sausage to the pot.
