  • 8 oz soba noodles
  • 1/2 cup red bell pepper, thinly sliced
  • 1/2 cup cucumber, thinly sliced
  • 1/2 cup shredded carrots
  • 1/4 cup green onions, chopped
  • 1/4 cup cilantro, chopped
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sriracha
  • 1 tablespoon sesame seeds
  • 1/2 teaspoon grated ginger
  • 1 clove garlic, minced

Instructions
 

  • Cook the soba noodles according to the package instructions. Drain and rinse under cold water.
  • In a large mixing bowl, combine the cooked soba noodles, red bell pepper, cucumber, carrots, green onions, and cilantro.
  • In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, honey (or maple syrup), sriracha, sesame seeds, grated ginger, and minced garlic.
  • Pour the dressing over the noodle mixture and toss to coat evenly.
  • Serve immediately, or chill in the refrigerator for 30 minutes to let the flavors combine.
