Ingrédients
  

  • 2 large zucchini
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil pesto
  • 1/4 cup pine nuts
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt to to taste
  • Black pepper pepper to taste

Instructions
 

  • Spiralize the zucchini into noodles and place in a large salad bowl.
  • Add the halved cherry tomatoes to the bowl.
  • In a small mixing bowl, combine the basil pesto, olive oil, and lemon juice, and whisk until well blended.
  • Pour the pesto dressing over the zucchini noodles and cherry tomatoes, and toss to coat evenly.
  • Season with salt and black pepper to taste.
  • Sprinkle the pine nuts and grated Parmesan cheese over the top of the salad.
  • Serve immediately or chill for 15-20 minutes before serving to allow the flavors to meld.
