- 1 pound tofu, firm and cubed
- 1 cup bell peppers, sliced
- 1 tablespoon ginger, grated
- 2 tablespoons vegetable oil
- 1/4 cup scallions, chopped
- 1 tablespoon cornstarch (optional, for sauce thickening)
- 1/4 cup water (optional, for sauce thickening)
In a bowl, mix the tofu with soy sauce and set aside for 10 minutes to marinate.
Heat sesame oil in a large skillet or wok over medium-high heat.
Add the tofu and cook until golden brown, about 5-7 minutes. Remove and set aside.
In the same skillet, heat the vegetable oil. Add garlic and ginger, sauté until fragrant, about 1 minute.
Add bell peppers, broccoli, and snap peas. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
Return tofu to the skillet and mix with the vegetables.
If you prefer a thicker sauce, mix cornstarch with water and pour into the skillet, stirring until the sauce thickens.
Garnish with scallions and serve immediately.
