  • 1 lb chicken breast, cubed
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup pineapple chunks
  • 1 bell bell pepper, diced
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 2 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon cornstarch dissolved in 2 tablespoons water
  • 1/2 cup water
  • 1/4 cup chopped green onions for garnish
  • 1 tablespoon sesame seeds for garnish

Instructions
 

  • Heat vegetable oil in a large skillet over medium-high heat.
  • Season the cubed chicken breast with salt and black pepper.
  • Cook the chicken in the skillet until golden brown and fully cooked, about 5-7 minutes. Remove and set aside.
  • In the same skillet, add the onion, bell pepper, and minced garlic. Sauté until softened, about 3-4 minutes.
  • Add the pineapple chunks and cooked chicken back into the skillet.
  • In a small bowl, whisk together ketchup, rice vinegar, soy sauce, brown sugar, and water.
  • Pour the sauce mixture over the chicken and vegetables. Stir to combine.
  • Add the cornstarch slurry to the skillet and stir until the sauce thickens, about 2-3 minutes.
  • Remove from heat and garnish with chopped green onions and sesame seeds before serving.
