  • 2 large sweet potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 avocado, avocado, diced
  • 2 cups mixed greens
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons chia seeds
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Toss the sweet potatoes with olive oil, salt, and pepper. Spread them out on a baking sheet.
  • Roast the sweet potatoes in the preheated oven for 20-25 minutes, or until fork-tender and slightly caramelized. Allow them to cool slightly.
  • In a large salad bowl, combine the roasted sweet potatoes, diced avocado, mixed greens, and red onion.
  • Sprinkle the chia seeds and feta cheese over the salad.
  • In a small bowl, whisk together the balsamic vinegar, honey, and Dijon mustard.
  • Drizzle the dressing over the salad and toss gently to combine.
