- 2 medium sweet potatoes, peeled and diced
- 1 medium red bell pepper, diced
- 1 medium green bell pepper, diced
- 1/2 medium red onion, finely chopped
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/4 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
Heat olive oil in a large skillet over medium heat.
Add the sweet potatoes and cook, stirring occasionally, until they start to soften, about 5 minutes.
Add the red and green bell peppers, and red onion to the skillet. Sauté for another 5 minutes until all vegetables are tender.
