- 1 medium red bell pepper, diced
- 1 medium green bell pepper, diced
- 1 can black beans, drained and rinsed
- 4 cups chicken or vegetable broth
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 2 cups cooked chicken, shredded (optional for vegetarians)
- 1/4 cup fresh cilantro, chopped
- 4 corn corn tortillas, cut into strips
- 1 avocado, avocado, diced
- 1/2 cup shredded cheddar cheese
Heat olive oil in a large pot over medium heat.
Add the diced onion and sauté until translucent, about 5 minutes.
Stir in the minced garlic and cook for another 1 minute.
Add the diced red and green bell peppers and cook until softened, about 4 minutes.
Mix in the corn kernels, black beans, diced tomatoes, and tomato sauce. Stir well.
