  • 4 cups mixed salad greens
  • 2 cans tuna in olive oil, drained
  • 12 small small new potatoes, boiled and halved
  • 1/2 cup green beans, blanched
  • 3 large eggs, hard-boiled and quartered
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, pitted
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons capers
  • 1/4 cup fresh herbs (parsley, basil, chives), chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and and black pepper to taste

Instructions
 

  • In a large mixing bowl, combine the mixed salad greens, boiled potatoes, green beans, cherry tomatoes, red onion, olives, and capers.
  • In a separate small bowl, whisk together the olive oil, lemon juice, Dijon mustard, garlic, salt, and black pepper until well combined.

  • Top the salad with the drained tuna, quartered hard-boiled eggs, and chopped fresh herbs.
