  • 4 cups watermelon (cubed)
  • 1 medium cucumber (peeled and chopped)
  • 1/2 medium red bell pepper (chopped)
  • 1/4 cup red onion (chopped)
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 2 teaspoons balsamic vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh mint leaves (chopped)

Instructions
 

  • In a blender, combine the watermelon, cucumber, red bell pepper, and red onion.
  • Blend until smooth.
  • Add the lime juice, olive oil, balsamic vinegar, salt, and black pepper to the blender.
  • Blend again until everything is thoroughly mixed.
  • Pour the gazpacho into shooter glasses and chill in the refrigerator for at least 30 minutes.
