  • 1 cup hummus
  • 2 cups mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped
  • 1 tablespoon lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • In a large salad bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and Kalamata olives.
